I assume that the Contact us! extension is as great as the other Akeeba extensions, so I want to use this as my contact form. But I cannot figure out how this package works. Where can I find some documentation/instructions?
Everybody will be able to see its contents. Do not include usernames, passwords or any other sensitive information.

This is an internal tool provided with no documentation or support. It's a fairly simple contact form component. Create one or more contact categories. The options are documented in their add/edit page. Ignore the GPG options, they are a bit too flakey.
Then create a menu item in the site's frontend for the Contact Us component. This implements the same contact page we have on our site's "contact us" menu item. The user selects a contact category, types in their message and sends it.
Contact Us supports Joomla's CAPTCHA plugins to reduce spam. It can also do automatic replies, either to let the person know that their message went through or — if they chose a category you don't want to receive emails about — to let them know that's now the proper way to do it. We do that for support requests, for example.
Each category can have multiple recipient emails, separated by commas. This is useful if you want for example your accountants to be notified about invoicing issues but also receive the notification to be aware of issues like that and possibly follow up with the accountants.
