When I create a new ticket in the backend, my admin is set as 'customer/user' instead of the user selected in the 'user' field under 'custom fields'.

ATS version: 1.2.0
joomla: 3.1.1

My user that created the ticket in the backend, is a super user, it's the same user that created the category the ticket was created in.

Another problem was that I was unable to add any content to the ticket before I saved it the first time.

Creating tickets from the back-end is not fully stable yet. Regarding your issues:
- Being assigned the wrong user: this is a known issue which will be fixed in the next release
- Not being able to create content when you create the ticket: this is a known issue but cannot be fixed. The back and front end user interface is very differently built. We could either not offer back-end ticket creation on behalf of users at all, or do it using the two steps method.

Please note that you can always create tickets in the front-end on behalf of a user.

We will be uploading a new dev release in about 10 minutes which fixes this issue. Can you please take a look at it?

Nope, that version broke all Akkeba parts of the site (incl backup and admintools):
Fatal error: Can't inherit abstract function FOFPlatformInterface::setCache() (previously declared abstract in FOFPlatform) in /home/snowpeak/snowpeakhosting.com/html/libraries/fof/platform/platform.php on line 24

Yes, I'm onto it. Stay tuned for a new dev release.

when I downgraded to the latest fof stable (beta), all components came back to life.

On an unrelated note.. I'm missing a menu item type or module, to create new tickets in front end. The 'My Tickets' view didn't contain any links either.

That's because of the FOF 2.1.b2. Try the latest FOF dev release: https://www.akeebabackup.com/download/developer-releases/fof-dev
