I know its probably not an issue with Akeeba, but is there a way to set a specific time for a CRON backup?

Ive recently only just changed from using the lazyplugin to cron backups.

In the lazy plugin I could set the exact time of the back up, but Im not sure how to when using the CRON job.

currently I have all my sites backing up daily, and they all back up at midday. I would prefer this to back up early morning and at staggered timings.

It depends on the host. For instance, in cPanel there is a field for the hour, minute and second when you want the CRON job to fire. Different hosts have different interfaces to the CRON scheduling daemon. Ask your host. It's such a common question that they're bound to have some documentation about it.

I think I have it!

I am using cPanel on a dedicated server and had used common settings.

I'm guessing If i select
minutes 5
hours 5
days 1

then the CRON will run at 5:05 daily.

You're almost there! For "days" use a single star. If you use 1 you are telling the CRON daemon to only fire on the first day of the month. With * you tell it to fire every day. If you want to do that every second day, use */2.
