I'm considering getting the pro version to backup a number of sites on dropbox.

In the Akeeba backup config, there is a setting for the maximum size for a backup. Does that work when the backup is send to Dropbox?
What happens if the dropbox account is full?

No, quota management can't work on DropBox as DropBox doesn't have an API, making it impossible to delete files. However, since the DropBox folder synchronizes with the local PC it's easy to keep the amount of backup under control by simply removing older backups from your local drive.

Another option:
Be sure the backup files, which you upload to dropbox, have always the same name. So, do not use a date or time stamp in the filename.
Dropbox will then delete/overwrite the old versions. The deleted files are not counted to your dropbox quota, but they are still accessible as "previous versions".
