In Akeeba Backup Admin area on one of the sites, since yesterday, we have the message

Akeeba Backup - An unhandled Exception has been detected 500 Undefined constant "Akeeba\Engine\Util\AesAdapter\OPENSSL_RAW_DATA"

Screenshot below, any ideas what it's ???

Yes, you need to tell your host to enable the OpenSSL PHP extension.
