I would like to uninstall Akeeba Backup for Joomla.

Could you tell me what is the best way ?
And what are the elements to delete ?

While knowing that I want to keep Admin Tools.

You want to uninstall the Akeeba Backup package. The shared part between Akeeba Backup and Admin Tools is the fof30 library. The uninstall program is smart enough to know that Admin Tools is still there and fof30 shouldn't be removed.

No, the package is the only thing you need to uninstall. Everything else is part of the package and will uninstall through that.
