Is it possible to exclude a column in a table? I take my dev site and copy it over top of my production site every night. I want to keep the page hits counter on the prod site so i get useful stats from it. It's a column called hits in the _content table. It is possible to just exclude that one column when i do my backups?

I'm sorry but that's not possible to exclude a single column from the backup, it could result in a completely corrupted database.
Regarding your specific issue about page hits, please remember that Joomla is not the correct tool to track them down. Joomla will simply update the counter every time the page is loaded, regardless from the user triggering it (a publisher just checking the changes, a search engine spider or a bot surfing the web).
The best tool is to use a website analytics tool such as Google Analytics: in that way you can really track down which are the most visited pages, reducing the risk to have wrong values.
