Description of my issue:

I tried to extract an akeeba backup localy on my computer with akeeba extract, but i have missing folder like administator, i checked directory exclusion they are not excluded.

which version of Akeeba eXtract are you using? Are you using the latest available (version 4.0.5)?
If not, please update and try again.

If you already are on the latest version, please try to use Kickstart to extract the archive, does it successfully complete?
