Is there a setting by which we can delete log files over a certain age automatically? We already transfer the back-up files to AWS and remove them from the server, but the log files remain and since each one is 6 - 12M, depending on the site, the storage requirements add up quickly.

That is an "unintentional feature" fixed in version 5.2.4. You should see them start to disappear. Note that they won't all just go away at once, that could lead to timeout errors. They are deleted a few at a time. If you are in a hurry, you can manually delete the old ones and new ones should delete according to the quota settings.
