Description of my issue:

Nick, should I still delete ALL existing files before restoring from backup?

It depends. If the Joomla! versions of the backed up and existing sites differ, it's prudent removing old files first. If they are the same version or doing something what I describe in Advanced Site Transfers then you shouldn't remove existing files.

Nick, apologies for not responding sooner.

The Advanced Site Transfers is interesting and certainly something I will be using, but not after some extensive practise.

Yes, practicing before using it live is not just a very good idea, it's the only recommended way to do it.
