I have translated the English e-mail texts from Admin Tools into German and after an update the texts are English again.
How can I prevent that the German texts are overwritten during an update?

you have to create a language override in Joomla, more info here: https://docs.joomla.org/J3.x:Language_Overrides_in_Joomla
