We got locked out of our site and are unable to find the plugins/system/admintools/services directory (see attached)... is there another file we can rename so we can gain access to our backend?

You say that you have Joomla 4.2 but this looks like Admin Tools 6 for Joomla 3.
Delete the entire plugins/system/admintools folder.
Then download the ZIP file of the latest version of Admin Tools 7 and install it twice in a row, without uninstalling it before or in between. This will replace the system plugin files with the correct ones.
