I was wondering how to proceed with this. I see the available current download for Admin Tools is version 5.0.0.b1. This tells me this is a beta version if I am looking at it right and I am curious if I am safe to install a beta version on a production website? I see the same is true for Akeeba Backup (6.0.0.b1). Neither of these is alerting me they need to be updated so I assume I am good to go with the current versions installed (Admin Tools 4.3.1 and Akeeba Backup 5.6.3) and that these will report as needing update once they come out of beta? Am I correct in that assumption?

You are correct, the new versions are classified as betas right now. The reason for the beta status is the updated interface. You do not need to update to these versions, the current stable versions that you have installed are fine.

I heard early this morning that a Release Candidate would be released next week, then later this morning I heard that the stable would be released next week. My take is that they have decided to jump to stable and skip the RC. But that stuff can be hard to keep up with.

The update notices are controlled by the stability level that you have set in Joomla!. Currently you have it set to "stable". When the new release is marked as stable, you will get a notice that an update is available.
