Have I read the documentation before posting (which pages?)? yes
Joomla! version: 1.7.5
PHP version: 5.2.17
MySQL version: 
Host: hostgator
Admin Tools version: 1.2.14
Description of my issue: I want to upgrade this site to 2.5 but am having difficulty using Admin Tools - It says that the "joomla core" is unknown. - Also, Akeeba BackUp keeps disappearing from the list of components but is still visible under "manage" - please help!

Your version of Joomla! is no longer supported. You cannot use Admin Tools to upgrade it anymore. The only versions of Admin Tools compatible with Joomla! 1.7 were modified to only update to the latest STS release which, at the time, was 1.7. Now it's 3.0 and this is obviously not what you want. Unfortunately I can't help you :(
