Description of my issue:

Hi, In the HTTP Response Header there is a value 'X-Content-Encoded-By :Joomla 2.5'. So this identifies the website as using Joomla 2.5. Is it possible to hide / remove this with Akeeba Admin Tools?

No, it's not possible in Joomla! 2.5 right now. Unless I am very mistaken, future versions of Joomla! will have that feature built in.
