Description of my issue:
I would like to change the Akeeba setting on my site so that not everyone who is a Superuser gets the "An update of Akeeba ....." emails

Hi Tony,

The way this feature works at the moment is an "all or nothing" approach. You can either have it send an update notification email to all Super Admins on your site or not send out update emails at all. If you want to disable update emails, please go to your site's Extensions, Manage Plugins and disable the "System - Akeeba Backup Update Check" for Akeeba Backup and "System - Admin Tools Update Email" for Admin Tools. Likewise, if you want to disable Admin Tools' Joomla! update notification emails, please disable the "System - Joomla! Update Email" plugin as well.
